People of the plains have set the precedent of how we used to eat our food, from nose to tail. You always hear about how people use plains peoples cultures regarding how they used every part of the buffalo. But, how, and did we use the lungs from the animal we harvest?

If you go to a restaurant anywhere, it’s very hard to find lung on the menu. It’s not a very common thing among cultures to eat the lung or at least it’s not very popular. If you research lung recipes on the Internet, you won’t find very many. It certainly is a distinctive taste, it’s a very iron flavor to say the least. Come to find out, lungs are banned from being sold in grocery stores, and even meat producers. So if we’re considered people that utilized every part of the Buffalo, what did we do with the lungs? Throughout the Lakota people, chefs and food preparers are all working very hard to revitalize recipes and methods of preparing foods that came from our harvests. The lung is one of the vital organs that you find within a harvest, it is a main piece of meat that kept the animal alive. In cultures throughout Europe and Asia, peoples have aged old recipes that utilize the lungs for their delicacies. Most of those recipes consist of drying the lungs and once dry, they would fill it with other meats, herbs and vegetables. Some of these cultures considered the lungs undesirable meat. It’s considered a poor man’s meal in some of those European cultures. Haggis is the most popular recipe of them all. Haggis is basically a collection of all the meat that is discarded or set aside for the purpose of Haggis. All of it is stuffed inside the lung. Using the air chambers to make way for the stuffing.
