Instructions

STEP 1

Rehydrate dried mushrooms by covering them with hot water for 30 to 45 minutes. Drain, and slice the mushrooms.

STEP 2

Trim off all fat from the oxtails. Spread the oxtails on a shallow roasting pan and roast at 450 degrees F (230 degrees C) for 45 minutes. Drain off any fat, reserving about two tablespoons.

STEP 3

Pour one cup of water into the roasting pan in which the oxtails were browned. Heat, frequently stirring, until the browned bits dissolve.

STEP 4

In a large stock pot, sauté the onion, parsnip, carrots and mushrooms in the reserved fat until the vegetables are soft. Add the browned oxtails. Pour brandy over the sautéed vegetables and ignite.

STEP 5

Add the reserved water and browning over the oxtails and vegetables. Add 5 cups of water, savoury, bay leaf, barley, salt, and pepper. Bring to a boil; then reduce heat and simmer for 2 hours. Adjust seasonings to taste.
